Edamame Dip

  • 12 ounces shelled, cooked, and cooled edamame
  • 1/4 cup diced yellow onion
  • 1 large garlic clove
  • The juice of 1-2 freshly squeezed limes
  • 1 tablespoon red miso
  • 1 teaspoon kosher salt
  • 1 teaspoon sweet chili paste
  • 3 tablespoons of Greek yogurt
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh parsley leaves
  • 1/4 teaspoon freshly ground black pepper
  • pinch of red pepper flakes
  • 4-5 tablespoons olive oil



Combine the edamame, onion, cilantro, garlic, lime juice, miso, salt, pepper, chili paste, yogurt and pepper flakes into the bowl of a food processor and process for 15-30 seconds, stopping a couple times to scrape down the sides. At the same time, add the olive oil in a slow drizzle while processing until smooth.


Serve with vegis, crackers, or use as a spread for sandwiches/wraps.
